Beaucoup Bakery

Beaucoup Bakery opened in Vancouver's Kitsilano neighbourhood in 2012, founded by pastry chef, author and entrepreneur Jackie Kai Ellis. Betty Hung, now head pastry chef and co-owner, took over the bakery with her brother Jacky in its fifth year and has pushed the menu further into the East-West fusion territory the bakery is now known for: a Peking Duck Croissant, a Golden Mochi Croissant and a Yuzu Almond Financier sit alongside the classic all-butter croissant, kouign amann and pain au chocolat that anchor a more traditional French pastry case. Tea shows up as an ingredient rather than just a drink -- the Milk Tea Peach Tiramisu layers black-tea-soaked ladyfingers with a milk-tea vanilla mascarpone custard and peach, one of the clearer examples of the bakery's stated approach of "mingling sweet with savoury" and marrying French technique to Asian flavor references. The business has grown from its original Fir Street location into a small Vancouver-area group, adding a St. Regis Hotel counter downtown in 2023, designed around a 15th-century tapestry theme built on self-expression and creativity, plus a third outpost in Britannia Beach. A decade in, the bakery's reputation rests as much on the fusion menu items as on the fundamentals of an all-butter croissant done well.
