Patrick Maury has run the Charcuterie des Halles on rue du Général de Gaulle in Troyes since taking over from his parents, who opened the shop in 1969, and in 2017 he was crowned France's champion andouillette maker. His andouillettes, made to a secret family recipe, have reportedly even been ordered by the Vatican.
